परिचय (Introduction) चौलाई पूरे साल मिलने वाली सब्जी है। इसका प्रयोग बहुतायत से किया जाता है। यह पित्त-कफनाशक एवं खांसी में उपयोगी है। बुखार में भी इसका रस पीना अच्छा रहता है। ज्यादातर घरों में इसकी सब्जी बनाकर खायी जाती है किन्तु इसके सम्पूर्ण लाभ के लिए इसके रस को निकालकर पीना चाहिए। चौलाई की मुख्य रूप से दो किस्में होती हैं। 1. लाल 2. हरी लाल चौलाई के पौधे का तना लालिमा लिए हुए होता है। इसके पत्तों की रेखाएं भी लाल होती हैं। इसके पत्ते लम्बे गोल तथा ज्यादा बड़े न होकर मध्यम आकार के होते हैं। हरी किस्म के चौलाई के पौधों की डण्डी और पत्ते का पूरा भाग हरे रंग का होता है। इसके पत्ते बड़े होते हैं। जल चौलाई इसकी एक कांटेदार किस्म है। इसके गुण कुछ अंशों में बढ़कर परन्तु चौलाई के समान ही होते हैं। औषधि रूप में इसके पंचांग, जड़ और पत्तों का उपयोग होता है। गुण (Property) चौलाई में विटामिन `सी´, विटामिन `बी´ व विटामिन `ए´ की अधिकता होती है। विटामिनों की कमी से होने वाले सारे रोगों में चौलाई का रस विशेष लाभ प्रदान करता है। चौलाई का रस शरीर को स्वस्थ करता है तथा शरीर को तरावट देता है। गर्मी को शान्...
